Here's to You, Chef Tim

The Numbers for Today:
  • Fasting Blood Glucose Level:  97 mg/dl. Gradually trending ever lower
  • Weight:  188 lbs
  • Exercise:  45 minute bike ride
  • Mood: 7.5.
 Menu:
  • Breakfast:  Fruit medley, Tofu/black bean salsa over corn meal/whole wheat pancakes.  A veritable carb fest, there.
  • Lunch:  Leftover split pea gruel on brown rice. 
  • Dinner: Taco salad, minus the tacos. 
  • Snacks:  Oh, Lord forgive me, one serving, more or less, of Baked Cheetos. 
It's getting late and I am just going to mention an admirable guy, Chef Timothy Moore. He was obese, weighed 350lbs,  had a size 48" waist and had diabetes.  What worked for him was going on a vegan diet and now has a 32" waist.

A 32" waist was my waist size in high school.  I would love to be a size 32" waist.  Guys seem to really like the 32" waist for some reason.  Must be the men's equivalent of a woman's size 8.

It took him about five years. The best is yet to come, I guess.  That alone is amazing because when most of us finally decide to lose weight, we just want it off now. He took this as a long term life adjustment.

He mentions Dr. John McDougall.  I am seriously tempted to buy Chef Tim's book.  Vegan soul food is what it sounds like.

Yet I know of others who have been in diets like this an they believe it caused their diabetes.  Find a diet you like and that works for you.  This one works for Chef Tim.
